Fill empty teapot with boiling water. Transfer water into teacups and allow to cool to 70 - 80 degrees C. |

Put tealeaves into the teapot. When water in cups has cooled to desired temperature, add to teapot. |

Brew for 30 secs - 1 min whilst swirling pot gently. Pour all tea from teapot into cups, alternating between cups as you pour to evenly distribute flavour. |
Note: Lots of people complain about really bitter green tea. Assuming that you are using tea leaves of a reasonable quality' the two biggest mistakes people make are using water which is too hot and brewing the tea for too long. Both will make Japanese green tea extremely bitter. |
The tea also becomes progressively stronger as you pour from the pot, hence it is important to evenly distribute the tea between cups. This is also why the last few drops of tea from the pot are regarded as the most flavoursome and so every effort should be made to drain every last one. |
